The best first date is the one I cook for you. Restaurants are too safe. Bars are a performance. Here I get to make you something with my hands. Cooking, honestly, is just affection in flour, salt and time. So: the best first date. I'm going first.

(One disclosure about the place. I built this apartment in a single day, so it can definitely get better. I also went looking for a birch texture as warm as the one in Minecraft and couldn't find it. Would've looked top on the floor.)

Beef Stew

"Estofado" — slow, stubborn, very Sunday-coded

A long, low stew. Beef that gives up after the second hour. Red wine, bay leaves, an onion that took it personally. Eaten with bread you tear with your hands and absolutely no fork.

Causa Acevichada

Yellow potato, ceviche on top, lime that bites back

Cold, silky, structurally suspicious in the best way. Lima yellow potato whipped with ají amarillo, then a layer of ceviche-soaked fish on top. Looks innocent. It is not.

Twelve hours of sauce, ten minutes of pasta

The classic, taken seriously. Beef ragù that simmered through an entire podcast, a thread of red wine, parmesan grated at the table because doing it in the kitchen is a war crime.

Octopus, charred, ají panca, no apologies

Octopus on the grill, marinated in ají panca and cumin until it stops resisting. Served with a potato that's been around the block. Ends in a conversation about Lima.
